Fire Dancer Potato Latkes Recipe

Ingredients
  • Fire Dancer Seasoning & Rub, 1 Tbsp.
  • Shredded Potatoes, 2 cups
  • Onion, ¼ cup, grated
  • Eggs, 2
  • Panko, 2 Tbsp.
  • Sea Salt, 1 ½ tsp.
  • Pepper, ½ tsp.
  • Peanut Oil for frying, ¾ cup

Instructions
  1. Before cooking food, in a large skillet, heat peanut oil to medium-high.
  2. In a medium bowl, whisk eggs and Fire Dancer Seasoning. Add in shredded potatoes, onion, Panko, sea salt and pepper. Mix all of these ingredients well and form small patties, about the size of the palm of your hand.
  3. Place patties in hot oil and fry for 7 minutes per side or until the patties are brown and crispy. Let patties drain on paper towels for 2 to 3 minutes to get rid of excess oil. Serve hot! Recipe Serves 6.

Notes
Fire Dancer Seasoning & Rub is also great as a fajita seasoning.
