Fire Dancer Black Rice and Mango Salad Recipe

Ingredients
  • Fire Dancer Honey Jalapeño Peanuts, ½ cup
  • Earth Family Jalapeño Dip Mix & Seasoning, 1 Tbsp.
  • Mandarin Oranges, 1 can, juice drained
  • Lime Juice, ¼ cup
  • Orange Juice, ¼ cup
  • Sunflower Oil, 2 Tbsp.
  • Black Rice, 2 cups
  • Water, 2 ¾ cup
  • Sea Salt, 2 tsp.
  • Mangoes, 2, peeled and diced,
  • Fresh Cilantro Leaves, ½ cup
  • Scallions, 1 cup, thinly sliced, green and white parts

Instructions
  1. Bring rice and water to a boil in a large saucepan. Season with sea salt. Cover, reduce heat to low and simmer for 25 minutes. Remove saucepan from heat and let stand, covered, for 15 more minutes.
  2. While rice is cooking, add lime juice, orange juice, oil and Earth Family Jalapeño Dip Mix & Seasoning together in a medium bowl and whisk well.
  3. After cooking food, drain rice in a colander and add to bowl with dressing; mix well. Add cilantro, scallions and mandarin oranges; mix into salad. Top with mangoes and peanuts. Serve at room temperature or chilled. Serves 6.
